Gluten Free Marshmallow Pavlova

Pavlova is an iconic Australian dessert – indulge on Australia Day!

Enjoy this sweet treat on Australia Day, or any special occasion

Ingredients

4 egg whites
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon white vinegar

Beat egg whites in an electric mixer until soft peaks form. Gradually add sugar, beating well until sugar has dissolved. Add vanilla and vinegar and beat for a further minute. Using a spatula, spread meringue mix onto an oven tray covered with a sheet of baking paper. The meringue can be spread in a circle or a rectangle to form a ‘slice’. It won’t rise much, so don’t spread too thinly especially if you like a soft meringue centre. Bake in slow oven (140℃) for 1 hour, or till pavlova is dry to touch. Cool in oven. Serve with whipped cream and your favourite fruits.

    Not long ago, I celebrated a birthday with dear friends, one was diabetic, two were vegetarians, another didn’t like beef, and was was just plain fussy.

    The friend who had offered to cook took everyone’s preferences in hand and created a fabulous menu. We shopped and the preparations were about to get underway when it hit me: one of the star guests was gluten free.

    We rushed to the shops to buy gluten free flour, which became the subsitute ingredient to dishes ranging from hand-made blinis to the most decadent triple chocolate cake. The food was stunning and best of all, every mouthful was savoured by all.
